Nothing brings me more joy and a genuine sense of accomplishment than knowing that sharing my raw vegan recipes is contributing to making kids healthy and happy around the world. Could anything possibly be more rewarding and inspiring? Every time a mom or grandma sends me a picture or video of their little offsprings busy in the kitchen, feasting on my fave raw vegan treats or beaming in front of a plate of zucchini pasta, it melts my heart and makes my day. The truth is I love concocting and sharing recipes that are colorful and delicious and they naturally make eating healthy fun and appealing to kids. Which is the ultimate win-win.
With Summer is full swing, I thought it’d be fun to celebrate with a healthy kids series special. And what better way to launch than with a summer favorite, ice pops!
These popsicles are 100% raw, vegan, dairy-free and free of processed sugars.
Raw Vegan Strawberry Ice Pops
Ingredients
- INGREDIENTS
- 1/2 cup of raw cashews (soaked overnight and drained)
- 2 cups of fresh strawberries
- juice of half a lemon
- 1/4 cup of orange juice
- 2 tablespoons of agave nectar or raw honey
Instructions

- Rinse the cashews thoroughly and throw them in the Vitamix with the lemon juice and sweetener. Blend until nice and creamy.
- Pour half the mixture in a mason jar or a bowl.
- Add the orange juice and strawberries to the remaining mixture and blend until you reach a creamy consistency.
- I used a set of six ice pop molds for these. Pour alternating layers of both mixtures in the popsicle molds and place in the freezer for at least a couple of hours.
- Thaw for fifteen minutes before serving (it makes removing the ice pops a lot easier).
- Et voilà!
