This super creamy fruit-powered ice cream is a dream. It’s the epitome of easy, minimalist un-cooking. Plus it comes packed full of flavor and it’s so healthy, you can happily ditch the guilt. As you peruse the step-by-step photos below you’ll spot some of my fave secret beauty weapons, enzyme-rich pineapple and antioxidant-rich raspberry, and a few of my must-have kitchen toys.
As always this global girl staple is 100% raw, vegan, refined-sugar free, unprocessed and fat-free to boot.
4 cups of sliced bananas (frozen overnight)
1 cup of chunked pineapple
1 cup of fresh raspberries
2 cups of fresh squeezed orange juice
1 tablespoon of shredded coconut (optional)
Put the bananas, orange juice and pineapple in the Vitamix and process until nice and creamy.
Pour half of the mixture in a mason jar and put in the freezer.
Add the raspberries to the remaining mixture and process until totally smooth. Put the mixture in the freezer.
If you want a real ice cream consistency (and you have the willpower to wait) let the ice cream firm up in the freezer for at least a couple hours before serving.
If you wanna get super fancy (and totally impress your entourage ;) finish up with a pretty ice cream swirl (I use decorating pastry tips for that) and sprinkle a tiny bit of shredded coconut on top.
